Lots of vegetables in a tasty egg matrix - easy, nutritious, and delicious.

This recipe helps to use up all that swiss chard - the fresh rosemary gave it a great flavor. I usually put cheese on top of a frittata, but this recipe has goat cheese mixed in. It worked really well - so lots of bites had good goat gooiness.

The ruby chard was very pretty and tasty in this recipe. Even the eggs turned a slightly red color which you might not be able to tell by my photo. I substituted purple scallions for the red onion and wow, their sweetness was a lovely surprise. Like Queezle sister, I loved the goat cheese in here. I kept all ingredients the same except for the eggs which I cut in half which made it perfect for two.
