Really lovely in its simplicity and seasonality. As simple as grating a ripe tomato over a piece of toasted bread rubbed with a clove of garlic then sprinkling with some sea salt. Really.
I just had it for a light snack, but it's also a perfect accompaniment to a soup or salad.

Wonderfully simple and full of flavor!
I live for summer's home-grown tomatoes, and typically eat them in sandwiches with mayo. This variation - with a touch of garlic, olive oil, and grated tomato is a viable competitor with my old standby. I think the garlic touch really complements the tomato flavor, and grating the tomato (which produced a coarse and not-too-attractive goo) made it easy to eat. I will try this one again!
