This recipes is a little bit fussy to make. I made a mistake, that worked out to my benefit. I forgot to peel the peaches before roasting them. It turned out that the peels came off much easier. I had some challenges with my pie crust, in that it shrank a lot (I was trying a new recipe, because I never use store-bought).
