Great tomato flavor, and a decent topping.
This is a variation on a recipe I previously reviewed and loved. This one was almost as good. We added about 1/2 C fresh basil to the cobbler topping. We didn't like it quite as well as the version with corn, and the version with cheese.
A great thing about these recipes - no need to peel the tomatoes, and I didn't even seed them. Such excellent tomato flavor.

15 tomato plants, and this is easy enough for the kids to prepare. Plus it really tastes great.
Tomatoes are my absolute favorite, too. We are enjoying them.

If you have a glut of tomatoes, Mark Bittman's tomato jam is kind of a treat -- especially on corn bread.

I have made the tomato jam with ginger, and have some in the freezer. Is there another one? You are right that it is a great treat, but we have not yet tried it with cornbread. Will try!

This gets you to reviews by me and by AJ, and it has a link to the recipe. Its really good - I've put it on puff pastry with manchego cheese, baked, for an easy yet elegant appetizer.

Oh I like that appetizer idea! I have company coming this week-end and that sounds like a lovely option.
