Excellent coconut flavor.
This recipe is a variation on the Olive Oil Cake (p. 852). The cook is instructed to replace the olive oil with coconut oil, and to replace the orange juice with a coconut milk + coconut mixture. Otherwise, proceed as written.

Sounds delicious. I've been using coconut oil more lately and I treat it like butter in baking - I melt it in the microwave and let it cool a little before using it. That might make this recipe a little easier.

That is a good idea! I also noticed different grades of coconut oil in our market, and wondered if some types were more suited to baking. It certainly infuses an amazing flavor to baked goods.

Where would you get coconut oil? I've never seen it, though I have never looked out for it either.

I found several types of coconut oil at Whole Foods, the big natural foods chain. I think I also saw it in one of our local markets, in the health food section. Mine was in a jar, like a mayonnaise jar, with pure white contents.
I remember in the 1980s when coconut oil was deemed really unhealthy. Ideas are changing about this, although I find mostly opinions on the internet, not the science that would fully convince me.

I can buy coconut oil in my grocery store, usually in the health foods section. Also any health food store would carry it. There are several brands.
