Excellent soup. I have made carrot ginger soup before and this one is especially good. I love the roasted carrots! I had to make many substitutions as I didn't have some ingredients and didn't feel like going to the store. I used half an onion instead of a leek. I used frozen shredded ginger and frozen lime juice (and no zest). Even with all of this it was still great!
