This bread was a big hit! I read a number of the comments with concerns about the cake sinking in the middle, and I decided to use 2 teaspoons of baking powder and one teaspoon of baking soda. The cakes turned out perfect! No problem with sinking at all! I didn't have a full cup of honey, so I used 1/2 cup of honey, 1/4 cup of agave nectar, and 1/4 cup of maple syrup.
