Cool and sweet, right next to hot and spicy.

This salsa is probably as good as your cantalope. I made two versions - one with diced green chili, and one without. I also used basil instead of cilantro.

I cut the cantalope into about 1/3 inch cubes, and the general consensus was that the cubes should be much smaller. That would have helped ensure that every bite had all the flavors.

We served this along side grilled chicken. Very nice.
