Pot Roast

Oh my goodness, my tummy sure is happy at the moment. I just finished some of this delicious pot roast and it was so good. The carrots and onions were fantastic and the cooking broth was delicious, both on some mashed potatoes and a biscuit. My hubby and son are happy campers too. They loved the beef and broth with the potatoes. They aren't carrot eaters but hubby did eat a bit of the onion. I know I'll be making this one again. It's so easy. It's been simmering in the oven while I did other things.
