Spaghetti With Green Tomatoes (Spaghetti Con Pomodori Verdi)

Surprisingly delicious! This is a late summer riff on pesto, but made with mint, basil, garlic, green tomatoes, and just a bit of olive oil, and no nuts. The recipe also called for arugula and parsley, but I didn't have either of those.

My green tomatoes were pretty hard, and the texture was a bit funny - but I just loved the flavor. Its a great way to deal with your green tomatoes, and I will (hopefully) remember this for the future.

Related note - this recipe is from Kitchen Window on NPR, but I couldn't find a kitchen window specific page. I would be happy if someone more familiar with that web site corrected this for me.
