A delightful thin pancake, which we served with lingonberry jam (Ikea).

The thin batter prepares a large number of pancakes, and we used this over two days (day 2 pancakes were just as good as day 1).

We love Swedish pancakes at our house, and often serve them with yogurt and granola, rolled up like little burritos. There's a great recipe at <a href="http://www.epicurious.com/recipes/food/views/Swedish-Pancakes-with-Berry-Cardamom-Topping-3060">Epicurious</a> for those of you without this book - though it sounds like an interesting title.

There is just something happy about those little thin rolled up pancakes, isn't there? I'll check out that Epicurious recipe - love that site! This book caught my eye at the library. 13 daughter likes a good breakfast, and as you probably can tell, she likes a a variety, too!
