I didn't understand how a carrot salad could garner a review of "5" from fellow cookbooker "Duck's Guts". It bugged me. So I hunted down the recipe and tried for myself.
This very easy salad has an amazing flavor. Kids loved it, and had huge second helpings. 13 daughter says it had complex flavor, not at all like carrot, 16 yr old son said little, but managed three helpings, and DH says he loved the subtle onion flavor.

Hi QS,
I am so, so glad that you liked it. I was a bit worried that it would turn out badly, not that carrots are expensive, but its disappointing when recipes fail
I can't believe you hand-grated it ' tho - wow!
Also, I am glad to hear that you used the discarded onions. It seemed such a waste to throw them away, but your idea was a good one.

I thought you were talking about actual guts from ducks and, well, that seemed sort of odd in a carrot salad recipe.

Oh that was confusing if you just read the bit on the home page! I've modified the review's opening lines so nobody else thinks I'm cooking with the actual guts of a duck!

Well, I'm glad I got to enjoy the hunt for the full review and the chuckle when I realized you were not talking about cooking with duck guts.

This was surprisingly nice, and very easy to make. Putting the carrots through the food processor only took a couple of minutes, and the onions, although taking longer then I expected, only need minimal attention on the stove. However, my onions didn't drain easily, to the extent that in the end I had to squeeze the flavoured oil out with my hands. Hi QS, yes that is the one! The only difference, is that Delia uses a "rounded dessertspoon" of coriander seeds, whilst the online uses a scant tablespoon. Same quantity, only I hadn't used a dessertspoon as a measurement for years, and didn't think anybody still did. I used peanut oil for the oil, and my carrots were from a large bag of juicing carrots, sold cheap, in the supermarket, not fancy carrots at all, a bit misshapen and some were broken. I started it late the night before, so they had marinated nearly 24 hours before serving the final steps.
