Coronation Chicken

Very delicious, according to DB, who had it for lunch today. The chicken was very tender, the sauce flavourful and the mango a refreshing contrast. We didn't use lime zest, lime juice, coriander and almond slivers, we might add them tomorrow. And it wasn't a lot of work, especially if you plan to cook the chicken while you're preparing other dishes.

I originally intended to prepare Sophie Grigson's version of Coronation Chicken but eventually decided not to as it uses 450ml mayonnaise. 450ml! I might give it a try in a few weeks and substitute most of the mayonnaise with Greek yoghurt, as in this recipe. It does look interesting, especially as it is quite different from this recipe (dried apricots instead of fresh mango and mango chutney, red wine added, etc).

Serve as part of a buffet, or with some bread and veggies as office lunch.
