Crusty bread, garlic, melted cheese = perfection! This is not only a great recipe as it stands, but the best way in the world to use up odds and ends cheese that is expiring in the refrigerator.

Personally I go very very light on the lemon juice. I am leaving the course off because while it makes a wonderful appetizer, a dish of this followed by an apple is, for me, Dinner, Par Excellence.
