I cut this recipe down to serve three and it was delicious. Very spicy from the chipotle, but the cheesy creamy grits took care of that and we like spicy anyway. Takes about three hours to cook all but delicious. Love using stone ground grits. Instead of stew beef I used beef tips which I got on sale. Love the bite sized pieces.

I served it with steamed asparagus and biscuits.
