Crunchy and sweet, with a definite salty edge. I selected this recipe to prepare for my DH for Valentine's day, but to my dismay, the dried cherries had become high protein (i.e. buggy). I substituted golden raisins.
The oats and coconut are coated with a honey-maple syrup-brown sugar-vanilla mixture (cooked down a bit), baked 15 minutes. Then the fruit (raisins, cocoa nibs) are added, and its baked for an additional 15 minutes.
