This recipe is great for lunch, brunch even a light dinner. These frittatas have a nice combination of vegetables, onions, eggplant, peppers and Kalamata olives. It also has two cheeses, Parmesan and feta. They give the frittatas rich taste and a bit of saltiness. This recipe makes four frittatas, but you can easily reduce the amounts. The recipe is also a base to experiment with different ingredients to make your own flavor combinations.
