This is a fun, different way to prepare small to medium potatoes. Since they need to be boiled first and then also roasted, they take a bit longer than other simpler preparations, but the final texture is great. Crispy little bits all over the outside, and creamy insides. The flavor of these needs to be bumped up a notch though. Maybe a flavored olive oil instead of plain or some garlic would be nice. A sprinkle of red pepper flakes or chipotle powder would be welcome on mine as well.

This a wonderful dish and fun to make and my son who will only eat mashed potatoes will eat these (bonus)! However I have found that I have to boil them longer then specified so that the 'crash' or 'mash' well. Twice mine have been too firm to do properly. They still tasted good but would have been better completed crashed.

I was a little worried about this dish when I made them. My potatoes weren't cooking through (because I'm impatient) and then they stuck to the masher. I added some fresh minced garlic to the recipe -- sprinkled it over the potatoes before baking. The finished product was so tasty and well worth it.

This may be my new go-to potato preparation. In fairness, I cheated quite a bit - using larger gold potatoes instead of new potatoes, and then (inspired by a different page on Pioneer Woman Cooks) microwaving them instead of boiling them. The end result was an amazing cross of creamy and crusty potato - almost like the top of a shepherd's pie. Obviously, your mileage will vary with a waxier or less cooked potato; probably a minute less in the microwave would have been closer to the recipe. Still... Read more
