A lovely pastry/cookie which is simple to make, lovely to look at and really delicious. I substituted marsala for the vin santo and left out the nuts. I used exactly the dried fruit mixture suggested (raisins, apricots, cherries and prunes) and a granny smith apple. Once I had filled and rolled the pastry, I chilled it briefly which made it easier to slice. I baked my cookies on a silpat and painted the glaze on the cookies right on the silpat.
