See review for buttermilk cupcakes. This makes a lot of icing. I love the lemon, chocolate ok. Trust me, the lemon rocks.

This is a good basis for cream cheese frosting, but I don't like the idea of using whipped cream cheese. I use regular cream cheese and think it makes for better flavor and better texture. I like both the lemon and chocolate versions. I also on occasion beat in some creamy peanut butter or for another variation, pureed cherries and a little almond extract.
