Jim Lahey's Birds Nest Pie

Delicious pizza - topped with shredded asparagus, cheese, and a couple eggs.

I could not find the type of cheese specified in the recipe (Saint Nectaire), and so substituted goat cheese. I also didn't use the quail eggs, and instead used the small eggs laid by our little silkie hen named Tink.

I let this cook for 3 minutes, added the eggs, and then cooked it another 3 minutes. The eggs turned out perfectly - white was fully cooked and the yolk only slightly runny.

I rather liked this pizza pie but some in the family didn't even want to try it. sigh

This recipe is similar to one featured on Smitten Kitchen, although Deb's recipe didn't include the egg.

This would be very cute served at easter.
