These were so flavorful and delicious. The only bad thing about them were they were a bit messy to eat. We used Monterrey Jack cheese but they would be good with the other cheese suggestions I'm sure. They were easy to put together and great for any night to eat. One to make again. This recipe is from the healthy issue. If you enjoy King Ranch Chicken and want a lighter twist then this is the recipe to try.
