I recently purchased some whole wheat couscous and was delighted to run across this recipe to use some of it up. I like that it gives you several variations for the curry and I decided to use cumin instead. Also it gives you several options for the cilantro and we used green onions. I used water as suggested instead of the veggie broth since I didn't have any veg broth. Despite this it was still very flavorful and I can only imagine that it would be even more so with the broth.
