This was pretty good, considering it is a "light" recipe. One serving (two enchiladas) was pretty filling for me, but wasn't quite enough for my husband who has a pretty physical job and therefore a pretty big (and forgiving) appetite. Just having chicken and cheese for the filling was a little plain for him, so we might add some black beans to the mix and just account for the extra while counting calories.
