One of the best quinoa salads I've made. If you don't have access to good fresh mango, just leave it out -- the salad is still good. It goes really well with avocado as well.

This is the recipe I make the most from this cookbook. Really fast to put together, tasty and you can make it ahead. It's a great gluten-free lunch to go.

This recipe is light yet packed with tropical flavor and nutrition. Plus, it only takes about 15 minutes to make! I didn't have scallions on-hand so I substituted it with red onions and shallots, still coming out lovely.

Try it. You won't be disappointed.

Not only tasty and nutritious - this salad is also a feast for the eyes. Bright reds from the bell pepper, black from the beans, bits of green from the scallions, orange from the mango - so lovely.
