This was another very good egg mug from Hungry Girl. I like the addition of spinach. The tip of microwaving the spinach a little first and blotting the excess liquid before adding the other ingredients helped the egg substitute to stay nice and fluffy and not wet. A simple sauce of Dijonnaise, plain fat free yogurt and lemon juice adds a nice brightness to the egg, cheese and spinach.
