I made a half recipe for three for hubby, son and I for our supper. Since son doesn't like shrimp I just added extra bacon to his. The dressing is a simple mixture of mayonnaise, chives and lemon juice but is great on this salad. After we had eaten son wanted to know if we had eaten all the dressing (he though it was bottled) he was surprised how good it was. This makes a wonderful supper or lunch for these hot summer days. I used some leftover sour dough bread for the toasted croûtons.
