Pomegranate molasses in this salad's dressing added a welcome note of sour-sweet. The earthy mineral flavor of the beets (roasted then chilled) were excellent, but the dressing, feta, and mint added a lot.
I would recommend using lots of mint - I used the full 1/2 cup, but wished I'd added more. Ditto on the dressing.
More likely, though, my "five or six beets" were larger than those used by the recipe's author. How I wish for more precise instructions!

QS, this is a lovely presentation. I had pomegranate molasses when I lived in CA briefly. Wish I could find it around here. I should check into ordering some online.

I don't find that many uses for pomegranate molasses, but I always watch for it to pop up in a recipe. Maybe you'll take a lovely vacation this summer - and can look for a specialty store! Oh - and as I look at this picture, I should have pointed out that the feta turns bright pink! Thanks for the note.
