Perfect; the best banana bread I've ever had. It's soft, moist, and the banana flavor really stands out. Plus, it gets a fantastic top crust.

I have to agree, this was really great and not at all hard to make. And I'm not even a fan of banana bread, although it's useful for using up those overripe bananas.

Update: I froze the leftovers, which I am still eating. I just defrost in the toaster oven first. Still delicious even after all that.
