A super salad, a big help to using up that zucchini surplus from the garden. I made this one night for us, then the next night for company.

  • The first night I forgot the basil. Not sure I didn't prefer it that way.
  • Had a bit of leftovers the second night, which we ate the next night. (Yes, that makes three nights in a row!) The zucchini surprised me by holding up remarkably well; the basil was a bit soggy.
