Joy suggests you serve this with scrambled eggs. I'm sure it would be good that way but I just served mine with some left over toasted cornbread for supper. It was easy and delicious. Roast up some potatoes in the oven with oil, salt and pepper. Caramelize some onions with butter in a cast iron skillet, add the roasted potatoes then some corn, a little more butter and some parsley. Delicious.
