Bright and very fresh tasting salad…but don’t leave out the oranges…they’re what make it special.

The dressing is a super easy, balsamic vinegar, olive oil, shallot and basil combination that was a perfect complement to the arugula/spinach blend I used. The dressed salad was good as is but with the oranges, it was outstanding.
