This is a great dish. I julienned the zucchini on a mandoline and sprinkled it with salt and let it sit 10 minutes. Then I drained it, rinsed with water, and squeezed dry. This made it much softer, like real noodles.
To use the aioli as a sauce, I used 1 1/4 cups water for the aioli recipe.
