Best grated carrot salad I every had and I have tried a few. No dried fruit or other solid ingredient is added and the dressing is just oil, mustard, lemon juice, honey, salt and pepper. I had lost this recipe for a while and had not been able to relocate it on the web. Was delighted to find the recipe and rediscover its deliciousness!

PS, just wanted to let you know I'm enjoying your reviews very much. I've had a hard time finding a carrot salad I really like and this one sounds up my alley.
