These rich bar cookies each have a whole date stuffed with a whole (small) pecan. This was a most unusual recipe and fun to make. But it took a long time especially since I started with cracking the pecans! Eating just one cookie is very satisfying with the range of tastes and textures. Worth making again. I was not sure how well it would store, but refridgerated it should be OK.

It must have taken forever to make these - but they look delicious. I am a fan of the traditional date bars, and so these would undoubtedly be great.

If you carefully put the whole side of a pecan peeking through, they are very elegant. You might be able to see that better in one of the other photos! I put the softer dates around the pecans that were in pieces and the harder dates around the whole pecans. I don't think this was as laborious as some of those recipes where you have several separate recipes, refrigeration steps, etc.
