I really liked this one but Mom said it was just ok. I made a half recipe for her and I for lunch one day. Loved that Ellie says you can use what ever veggies you have on hand and just use her recipe as a suggestion. Since I had red, yellow and orange bell peppers I used a few strips of each along with some green onions, mushrooms, and broccoli. I didn't have baby corn so I omitted that.
