Since going Vegetarian, I miss my mother's homemade meatballs. I am excited to say with the Veggie Num Num recipe, I have found a delicious alternative. Although I prefer my own sauce, these make the best Spaghetti and Eggplant Balls, as well as Eggplant Ball Sandwiches. My husband is a meat lover, and he LOVES these Eggplant Balls.
