I had a craving for a good baguette and accidentally came across this recipe. It is a no-frills version of the classic French autolyse method and I am happy to say it works--and it really can be done in four hours. I followed the instructions exactly. One of the easiest bread recipes ever, it results in three quite decent baguettes--nice crust, nice chew, but not a lot of flavor.
