This couscous was excellent. It reminded me a bit of the Moroccan Roasted Vegetables from one of my Moosewood cookbooks, but the flavouring was more subtle. I really liked the addition of butter to the cooked couscous. I bought parsley root instead of parsnip (they look very much the same) and really enjoyed the flavour. Definitely will make this again.
