Tangy and sweet! I thought this recipe was simple and delicious. The crunch of cornmeal in the crust is a nice change from the usual shortbread and it was indeed lighter. The filling was lemon-y and bright without being overly sour or cloyingly sweet. Next time I will cook them about 2 minutes less, after the minimum 15 minutes they did not have much "jiggle" as the author describes. They were easy to slice and held together well.

I love lemon desserts and a series of lemon dessert recipe reviews on this site had me craving one. I wanted something quick and easy and came across this lemon bar recipe which had the added bonus of being relatively low in fat.
