A lovely spinach salad with bits of bacon and sliced hard boiled egg. I used cottage bacon which contains very little fat. The pieces of bacon were a great counterpoint to the spinach, and the sliced egg was also great.
I found that the amount of vinaigrette was pretty small, but just enough. Your mileage may differ.
