Actually, 4.5-5 for flavor and ease of prep, but the instructions are pretty poor.

The recipe calls for 100g/2oz of sugar to sweeten 2 cups of milk. My scale was set for grams, so I weighed out 100g and marveled at the amount of sugar for this amount of milk. Of course, 100g is 3.5oz of sugar, which would have made it almost inedible, I expect. I used the 2oz (56g), and might cut it back a bit further (50g perhaps), since neither of us cares for really sweet tastes.

That's weird. My edition calls for 1 quart (plus 3 tablespoons) of milk, so that's about 4 cups! It also says it serves 4, and it uses 1/4 cup of sugar, which would be about 50 g. No wonder yours was both too sweet and too small an amount, you needed twice the amount of milk.

Ah, that makes sense. I thought it might have been a serving conversion problem that went awry. I must have bought this book off Amazon UK (or France, which serves up UK editions), so have a UK edition which was (badly) converted from the US one. The milk was ml and fl oz, both 2 cups worth. The sugar was g and oz, but the grams were *way* off. Next time 1 quart of milk. That will work much better.
