My middle school aged son chose Hokey Pokey to make for a school project as a food that comes from New Zealand. The recipe he found online included Lyle's Golden Syrup. It took me a while to find this ingredient locally but we were able to track it down.
When I looked at the recipe he had printed it had no directions - just ingredients. I found this Nigella recipe but it used dark corn syrup instead of golden syrup. There was no way we weren't going to use the golden syrup that we worked so...

I had to find Lyle's golden syrup for <a href="http://www.cookbooker.com/recipe/27606/chocolate-orange-steamed-pudding">this</a> dessert. It was difficult to find, but oh so delicious! I love it when kids cook - and I appreciate teachers who give assignments to cook at home! Bravo for your son.

Hi Beth, the Hokey Pokey sounds good, glad to hear that your son's school is teaching cooking :-) Golden syrup doesn't go off, but in Australia it mostly seems to be used for Golden Syrp Dumplings if you were wondering how to use up the rest of the tin. We love them in winter, not diet food! <a href="http://www.taste.com.au/recipes/6557/golden+syrup+dumplings">http://www.taste.com.au/recipes/6557/golden+syrup+dumplings</a> looks close to the recipe we use, except use ordinary salted butter and the syryp is just 1 1/2 cups water, 1/3 cup golden syryp and 1 1/2 tablespoons butter. No castor sugar and only sometimes the lemon juice. I bake them at 190 C for 20 - 30 mins, makes a lighter softer dumpling. Put the raw dumpling mix in a baking dish and pour the syrup over the dumplings. Very easy recipe.
