Our whole family enjoyed this vegan version of the classic Mac 'N Cheese. The sauce uses a base of cashew cream with veggie stock and vegan cheddar cheese added. It was very creamy and simple. A definite make again, this dish is especially kid friendly.

I looked into buying this book a few months ago in the hopes of getting my carnivore husband to eat less meat so it's great to see a recipe review from it. Thanks for the great review and hope to see more(?);)

Zosia and QS, I think this is a very accessible book of vegan recipes. They're fairly simple, mostly American cuisine, some with a Latin flavour. I'll try and cook some more from it before it goes back to the library. It has tons of great photos too which is always a plus.
