Green Salad with pink goat cheese hearts

If you are looking for something cute for valentines, you could do a lot worse than making these. Its simple; goat cheese is mixed with shredded beets, flattened and cooled, then cut into hearts.

I made the mistake of leaving the goat cheese in the freezer, and it took more than an hour for it to become soft enough to cut into hearts.

The simple green salad was a nice backdrop to these hearts. We prepared these, of course, for valentine's day.
