Ingredients:
  • 6 cups broth
  • 1 red onion, chopped
  • 2 T fresh ginger minced
  • 4 cloves garlic
  • 1 t salt
  • 1 bunch greens (Kale, collards, spinach)
  • 3/4 c peanut butter
  • 1/2 c tomato paste
Notes: I use spinach should be garnished with sriracha and maybe chopped peanuts--I like a little yogurt or sour cream puree finshed soup good hot or room temp

This recipe is so tasty! It has really basic ingredients, but is so delicious. I will definitely make this one again!

I make this with spinach and up the amount of tomato. I puree it with an immersion blender and serve it with sriracha and sometimes a bit of thick yogurt or sour cream or creme fraiche. It's also good made with chicken stock.
