It's a very simple dish, but it works very well. DH really enjoyed the combination of peppery watercress with the full flavour of salmon; I thought the watercress was just a bit too peppery because it's completely raw - something like in Nigel Slater's Grilled Salmon with Watercress Cream Sauce might work better.
We didn't make the cheat's aioli as described but made aioli from scratch, and this time it worked. Be careful not to add too much garlic, actually you want to taste more lime than garl...
