This is a perfect example of when the total is greater than the sum of its parts. Fried eggplant slices paired with chopped salad, tahini sauce, and an herb/chili paste. It may seem like a lot of work, but it really isn't, and it is WORTH it. Definitely make the tahini sauce and zhoug recipes, because this condiments elevate this dish from good to great.
