Carla gives you the choice to use ground turkey or chicken and since ground turkey was a dollar a pound cheaper when I decided to make these for my daughter and I, I went with turkey. The spicy mayo for these is great on these burgers but my son also loved it on beef burgers and I agree. I'll be making this mayo for other sandwiches as it has a nice kick.
