Very flavourful condiment that has typical sweet-sour-tangy flavours of pickled foods but also a very strong lemon flavour and a little bit of heat.

It's very easy to make and is ready to use after only 24 hours.... a great alternative to preserved lemons with better texture and more of a pure lemon flavour.

I used it in place of fresh lemon segments in the balilah (page 102) but have also served it with grilled fish, chicken and savoury pancakes. Delicious.
